Weekend Fun!

Hello Friends! How was your weekend? Ours was busy and fun in a good way. The weathers been rainy and windy, so our activities were mostly indoors. Saturday, we watched the movie “Bridges of Spies” starring Tom Hanks and the movie was great. I highly recommend it (I will not be surprised if it will get some Oscars). After the movie we had dinner at the RAM (it’s a sports bar).

Sunday, my In laws gave us tickets to watch a musical show “Snapshots”  in our local “broadway” theater. We really enjoyed it and were grateful for the tickets, otherwise we would have missed a great show. We had some Chinese food after the play.

Roasted Tomato Basil Soup

Hello Everyone! I finally used all of my tomatoes (the ripe ones) that I harvested from my yard and put them to good use. I don’t eat fresh tomatoes but I do like it when they are roasted.  They are so full of flavor when prepared that way. Tonight I made Ina Garten’s roasted tomato basil soup and it’s so good. It was a really simple recipe, but I did use my Vitamix instead of the food mill that Ina recommended. Fall is just perfect for this kind of soup.

Roasted Tomato Basil Soup (Ina Garten/Foodnetwork.com)

Ingredients:

3 pounds ripe plum tomatoes, cut in half lengthwise
1/4 cup plus 2 tablespoons good olive oil
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
2 cups chopped yellow onions (2 onions)
6 garlic cloves, minced
2 tablespoons unsalted butter
1/4 teaspoon crushed red pepper flakes
1 (28-ounce) canned plum tomatoes, with their juice
4 cups fresh basil leaves, packed
1 teaspoon fresh thyme leaves
1 quart chicken stock or water

Directions:

Preheat the oven to 400 degrees F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.

In an 8-quart stockpot over medium heat, saute the onions and garlic with 2 tablespoons of olive oil, the butter, and red pepper flakes for 10 minutes, until the onions start to brown. Add the canned tomatoes, basil, thyme, and chicken stock. Add the oven-roasted tomatoes, including the liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes. Pass through a food mill fitted with the coarsest blade. Taste for seasonings. Serve hot or cold.

Hello Friends! I hope you had a great weekend. We had non stop rain and crazy wind this weekend, so we spent most of our weekends at home (watching Netflix). The only time we went out was when we had dinner at my fave Pho place and did our grocery shopping after. I wanted to share my menu plan this week just because, and hopefully I can stick to this since we have all of the ingredients and this will surely help us save money (no longer having to do last minute grocery shopping). I only listed our dinners because for breakfast and lunch, we usually just have the basics like eggs, toast, and cereals. Our lunches tend to be left-overs and sandwiches.

Happy Labor Day!

Hello friends! Hope you had a relaxing labor day weekend. Ours was a good one! The hubs and I enjoyed sushi and Korean drama (our latest thing!) friday evening. Take out food and movie/tv show marathon is one of my favorite date nights with hubs. The weather lately is one of the reasons we prefer staying at home. We’ve been having lots of thunderstorms and Riley is always stressed when he hears the thunder. No matter what we do to comfort him, nothing seems to work.

We finished the Korean drama “That Winter, The Wind Blows”. I really like the lead stars, they look so good together but the ending of the show was a little disappointing for us.

Saturday we went to the Evergreen State Fair! Had a blast with my In laws and we ate too much fair food:)

We went to church Sunday morning, did a little grocery shopping after. Enjoyed teriyaki for lunch and a nap and lots of cuddling with Riley. We started another Korean drama show that my friend Faye recommended (Fated to Love) which is on Netflix right now. We finished the 20 episodes in 2 days ( I think we are lightly obsessed with RomCom shows lately).

Today (Monday,Labor Day) I did a lot in the kitchen. I roasted the tomatoes that we got from our garden and prepared Rileys food for 2 weeks. I wish we “trained” Riley how to eat commercial dog food (I’m sure there’s lot of decent dog food we can get him). I’ve been cooking his meal for the last year already ( Our vet gave me some recipes to use). He’s our fur baby so it’s worth it for us to make dog food from scratch,know what’s in his food. Back to the tomatoes, I’m looking forward to using my roasted tomatoes in the coming weeks for soups and pasta dishes.

We had Mexican takeout for our dinner tonight, nachos and beef taquitos are always good! Hubs bought some Krispy Kreme donuts for us because it was a long and tiring day of kitchen work:)

Happy September friends! Although It’s not yet “officially” fall, the weather outside seems like it is. It’s been raining the whole time and windy too. I think it’s time to get out some of my fall decorations ( I don’t have a lot), burn some fall candles, drink a Starbucks Pumpkin spice latte to really put me in the fall spirit. I love fall but the constant rain is annoying. Anyways, I wanted to share some of our meals that we’ve been having in the last part of August! Recent Hauls!

Hello Friends! Happy Friday:) I wanted to share my “recent” hauls for the last couple of months (some products I got around April) just because! I personally enjoy watching these kind of videos on youtube or blogs to get some ideas from the product reviews which I find very helpful. Most of these I ordered online and were on sale because, just like the majority of people, I like me some good deals!

I went to Bath and Body works for their semi annual sale (last June) because I got a good coupon and wanted to use it.  I rarely use their products now (aside from their candles) because I’m trying to use more “natural” and organic products (slowly trying).  I know my sister (Hello Ate!) wanted me to get her some of these, so these are for her. I bought 2 candles and I regret the Rio Red Guava because it sure gave me a headache after burning it for 3 hours. I hated it, but the hubs likes it.  I will probably throw this one out, but I’ve read somewhere that you can actually return a candle even after burning it and get a new one (exchanged it) but I’m not sure if I want to do that! It’s not their fault if I don’t like the scent of the candle I picked it…smelled great at the store.

I’m trying to drink less ‘real’ coffee now (it’s so hard!) so I started drinking Teeccino Herbal coffee. It’s a great alternative to coffee because IMO it taste like coffee without the caffeine. I’ve had this before so I decided to just buy it in bulk on Amazon (I think it was on sale when I got them). My favorite is the French roast dark!

I got this on Amazon together with the Teeccino coffee, and I love the white chocolate wonderful one! A more natural version of peanut butter than what we’re used to eating at home. They’re all good, so creamy and the prices at amazon were decent too. I’ve checked it at our local grocery store and there’s no way I’m buying them there.

Henri Bendel had a summer sale last June, it’s one of my favorite brands because the quality is superb. I like it because you can only buy their products at their stores and online. It’s not “everywhere” unlike Michael Kors or Kate Spade. I feel like every woman on the planet has an MK bag or something. The prices are affordable so long as they are on sale:)

I dropped some donations at our local Value Village last weekend, they gave me a coupon that I can use in the store as a “thank you” for my donations. I checked their books section and found these goodies. I think I paid $6 after my discount. I’m looking forward to trying some recipes in the coming weeks.

Nordstrom had their Anniversary sale last month and I decided to get these Nike shoes. They got decent reviews and I’ve been wanting to get a pair of “light” sneakers for a while now. So with the sale I thought I would just get this and return it if I’m not into it.  I’ve used them already and they’re so perfect for me! Super comfortable and light weight. I know I will get a lot of use out of these shoes in the coming months. Happy savings friends!

*For the month of August, I’m joining the #buynothing challenge! This means I’ll only buy the necessary (no starbucks coffee for me or things I’ve mentioned above!). So far so good for me, the first week was easy, I avoided Target and Homegoods (these stores are my weakness!). We’ll see how I will do in the coming 2nd week:)

Fried Chicken!

Hello Everyone! I wanted to share this Fried Chicken recipe from the Pioneer Woman! This episode was shown weeks ago on the Food Network and I thought I could do this because I had all of the ingredients. I “rarely” prepare fried chicken because it’s just messy and I can get it so cheap at our local grocery store (it’s decent too,taste wise!). I still made it anyway, because I wanted to make a mess in my kitchen! Not really! It was good and flavorful but I think the amount of clean up afterward wasn’t worth all of the hassle. I had to cut the recipe in half because unlike Ree (the Pioneer Woman) it was just me and the Hubs.

Fried Chicken, Salad,Gnocchi

Fried Chicken (recipe: Ree Drummond; The Pioneer Woman)

Ingredients:

2 cut-up fryer chickens in 16 pieces

4 1/4 cups buttermilk

5 cups all purpose flour

3 tablespoons seasoned salt,such as Lawry’s

2 teaspoons paprika

2 teaspoons ground black pepper

2 teaspoons ground dried thyme

1 teaspoon cayenne pepper, plus more for seasoning

1/4 cup milk

Canola or vegetable oil, for frying

Directions:

Thoroughly rinse the chicken, then cover all the pieces with 4 cups buttermilk and soak in the fridge overnight or up to 24 hours. When you’re ready to fry the chicken, remove the bowl from the fridge and let it sit on the counter for 30 minutes, just to take off the chill.

In the meantime, preheat the oven to 360 degrees F and mix up the breading. Place the flour, seasoned salt, paprika, pepper,thyme, and cayenne (extra if you like heat) in a very large bowl. Stir together well.

In a small bowl, combine the 1/4 cup buttermilk and the milk. Pour the milk mixture into the flour and, with a fork, gradually mix until there are little lumps throughout. This will adhere to the chicken and make for a crispier breading. If necessary, add a little more flour or milk to the bowl in order to make it slightly lumpy.

Heat 1 1/2 to 2 inches of oil in a deep skillet over medium-high heat until a thermometer reaches 365 degrees F. Lowe the heat slightly, if necessary to keep the oil from getting hotter.

Working in batches, thoroughly coat each chicken piece with the breading, pressing extra breading onto the chicken if necessary. Place the breaded pieces on a plate.

Add the chicken to the oil 4 or 4 pieces at a time. Make sure they aren’t sticking together, then cover the pan and fry for 5 to 7 minutes, checking occasionally to make sure the chicken isn’t getting too brown. Turn the pieces over, cover again, and cook 3 to 5 minutes more. All the while, monitor the temperature of the oil to make sure the chicken doesn’t burn.

Place the chicken on a baking sheet and continue frying the rest of the chicken. When all the chicken has been fried, remove the wings and legs to a plate and keep covered. These should be cooked all the way through by now but always check, if any pink juice or meat is visible. If so, return to the hot oil for another minute or so until fully cooked. Leave the thighs and breasts on the baking sheet.

Bake the thighs and breasts for 15 minutes to finish the cooking process. If any pink juice or meat is visible,the chicken needs to continue cooking in the oven.

Grilled Tuna Belly

I grew up eating a lot of tuna belly in the Philippines because our area just has an abundance of seafood. I do not remember eating frozen seafood, especially fish for that matter! It’s kinda different here in Washington state, the “fresh” ones are so expensive and the frozen are not the best quality I’ve had. Oh well! That’s why I get so excited to go to the ocean because we always get fresh seafood, like tuna belly. The fishermen got it in the morning, and we cooked it for dinner the same day! It was so good:) When we got back home I just prepared the rest of our tuna belly because I didn’t want to freeze anything.  I don’t mind having tuna belly for consecutive days if it is fresh and I don’t get to have it often. I marinade it in soy sauce (I used less sodium,1/2 cup), 4 or 5 tablespoon of olive oil, chopped garlic (3 cloves),then pepper. Marinated it for 4-5 hours. Then I grilled it for 4 minutes each side (medium heat). Enjoy with rice and dipping sauce (like vinegar or PINAKURAT is what I used;it’s a famous filipino vinegar.)

Happy Wednesday all! It’s still HOT here on our side of the country, and I’ve been enjoying iced coffee lately. I just had one with my Mom In Law earlier at Starbucks. Garden 2015!

We’ve been having a great week in the PNW (weather wise) so I’ve been enjoying staying in our patio and my little garden, savoring summer! I didn’t go “all out” in my garden this year and kept it simple. I had tomatoes and herbs and cheap annuals just to add color and that’s about it. I have 3 hydrangeas and I’ve been enjoying them inside the house too. They’re my favorite! I’ve been loving free flowers for the last couple of weeks now. I’ve been using our herbs too in my cooking. I love summertime:)
