Chicken Stock

I made chicken stock earlier this week using our crockpot. I’ve made this recipe twice already and this stock is really good, so flavorful.  If I can help it, I will probably use homemade chicken stock/broth in my cooking.  It’s such an easier and healthier version compared to “Swanson”.  The recipe is from Ina Garten, my favorite Barefoot Contessa.  I think I’ve seen all of her T.V. episodes.  I love her!  Her recipe used the stove top while I did mine using our crockpot.

Chicken Stock (adapted from Ina Garten; foodnetwork.com)

Ingredients

  • 3 (5-pound) roasting chickens
  • 3 large yellow onions, unpeeled and quartered
  • 6 carrots, unpeeled and halved
  • 4 stalks celery with leaves, cut into thirds
  • 4 parsnips, unpeeled and cut in half, optional
  • 20 sprigs fresh parsley
  • 15 sprigs fresh thyme
  • 20 sprigs fresh dill
  • 1 head garlic, unpeeled and cut in 1/2 crosswise
  • 2 tablespoons kosher salt
  • 2 teaspoons whole black peppercorns

Directions

Place the chickens, onions, carrotsceleryparsnips, parsley, thyme, dill, garlic, and seasonings in a 16 to 20-quart stockpot. Add 7 quarts of water and bring to a boil. Simmer, uncovered, for 4 hours. Strain the entire contents of the pot through a colander and discard the solids. Chill the stock overnight. The next day, remove the surface fat. Use immediately or pack in containers and freeze for up to 3 months.

I shopped at Walgreens and Target today.  I had register rewards that I wanted to use and Target coupons that are going to expire this Sunday.  It’s so nice to shop at Target around evening because there’s no line for the cashier:-)  I will give all the fruit snacks and most of the things I got today at Target to my family back home.  I just got most items because with coupons they’re all cheap and I know how much they will love them back home.

I shopped at Walgreens and Fred Meyer (kroger affiliate) today.  I wanted to get some coffee creamer at Wags (sale for 2/$3,original price is $2.49). Luckily,I got some pretty good deals at their clearance section with the vegetable oil and hand sanitizers(original price $2.79, clearance price .69 cents). For my Fred Meyer trip, I used coupons on most items except for the milk and veggies.I think I did OK:-), Hope you had great savings!!

I shopped at the Asian market and Fred Meyer(kroger affiliate) this week. I only took a picture of my FM trip.My favorite was the organic tomato sauce(original price 99 cents,sale price 65 cents) and the milk (original price $1.85, sale for $1).

Savings and Organized Stockpile/Pantry!!

I shopped at Walgreens and Fred Meyer this week. I had a couple of RR from wags that I wanted to use because they’re about to expire. I really didn’t want anything from Walgreens this week so I got something that I can use in the future, thus I got packaging tape.  I plan to send something to my family in the Phillipines before the year ends and I will be using lots of packaging tape.

For my Fred Meyer Trip (Kroger affiliate) I took advantage of their mix and match promo this week.  My husband’s favorite cereal was included in the promo so I got 5 boxes (he’s been asking me since 2 weeks ago when can I get him Life cereal, but I told him to just wait another week and they’ll be on sale soon:-).  They also have a good deal on their milk this week ($1 for half gallon,normally they’re $1.85).  I also splurged on the Organic Chanterelle mushrooms because I wanted to try a recipe I saw online that need this kind of mushroom.  I organized our pantry this week and realized that we only had 1 ketchup and FM had ketchup on sale this week too, so I got 2.

Part of my “summer bucket list” is to clean and organize our house, one room at a time! This week I started with our pantry and laundry room.

This use to be our “I don’t want to deal with it right now room” hehe..boxes,coats,old shoes.
I’m a big coffee drinker so I always try to stock up with coffee and Kcups (they’re kinda expensive)
