Long weekend!

Hi friends! How was your Memorial weekend? Thank you to all who served and gave the ultimate sacrifice (and their families). We had a good long weekend. Lots of family time spent in the park, biking and playing! We’ve been enjoying summer like weather lately so that is a plus:)

Hubs cleaned the kiddie pool and the yard too! Thanks Hubs:) He set up the patio table, we used it for our family bbq! Papa’s burgers were a hit!

Weekend Fun!

It’s been a quiet weekend here at home, raining most of the time! We stayed home aside from our grocery shopping and Mia’s soccer game. Hubs and I finished a korean drama, “Touch my Heart”, kinda slow for us but we enjoyed it. We love our Kdramas here! Wholesome shows compared to most American tv series..HA

Mia and I had a little tea party last Friday! She’s been asking me to do this for a while and I finally said YES! I used to collect Lenox Butterfly Meadow collection. I got their tea set collection a while ago, so I’m happy that I get to use it with her now. I don’t collect Lenox anymore. Mia loves having a tea party because I get to spoil her with cookies and sweet treats. She got a sweet tooth for sure:) It’s so fun to make special memories with her.

Grandpa stopped by this weekend too and dropped off some treats for the kids and sandwiches for us!YUM

Super Easy Pasta

I made this Tuna Puttanesca pasta yesterday and it was delicious and filling. I used fresh tomatoes instead of canned and omitted the pepper flakes because the kids don’t like spicy food. I got the recipe from the Food Network website. This is a dish where most of the ingredients can be found in your pantry. I used left over tuna though because we had tuna sandwiches days ago and we used fresh tuna. Original Recipe

I’m trying to use and cook from my pantry lately because I’m done wasting food. I’ve been guilty of throwing ingredients because of buying too much and not using it right away. That is money wasted. Ugh!

Mother’s Day!

Our Mother’s day last week was so fun and special. We celebrated both Mother’s day and my MIL’s 70th birthday. The kids did a little art project for their Nana and she loved it. We ordered Chinese food to make it easy and relaxing for everybody. My Hubs spoiled me too much too!HA.. he gifted me a Le Creuset pan and dutch oven (both in Agave color) I love it:) He made crepes for breakfast and showered me with Roses. Thanks, Ga!

My In laws gifted me an Amazon card and I used it to order Fresh/Prime grocery because I want to add more to our stockpile/pantry. I plan to do a pantry challenge next month.

Hello!

Hello Friends! Long time without hearing from me. I took the time off because last February I started experiencing tinnitus (ringing in the ear), first time to have that happening to me. I have a hard time sleeping and was so anxious that I have to go to the urgent care to have it looked at. February and March was full of doctors and specialists appointments. I still have my tinnitus but I’m dealing with it in a better way now, and I’m getting decent sleep so that helps big time. I’m thankful that I have access to good healthcare and get the help I need. Praise the Lord!

Aside from this, life is pretty normal here, raising kids and taking care of family/home. Mia finally learned to ride a bike (she was just using her balance bike) and she’s very good at it. We upgraded it with a pedal kit. She likes to go FAST!HA.. Growing so fast and such a big girl now. Matthew is starting to practice scooter and getting the hang of it. Hubs and I celebrated our 13th wedding anniversary! Love you Hubs, you’re the best:)

Linguine with Shrimp Scampi

Hello Friends! I wanted to share a simple but delicious recipe that I prepared tonight. It’s Ina Garten’s Shrimp Scampi recipe (https://www.foodnetwork.com/recipes/ina-garten/linguine-with-shrimp-scampi-recipe3-1916619 ). This dish will be perfect in the summertime, fresh lemons and pasta!YUM 🙂 The kids had meatballs and linguine because they’re not eating shrimp right now.

We had a quiet day at home today! With all the crazy things going on right now, making our home cozy and happy is what we chose to do. Read our Bibles and praying for our country!

Mia loving her lessons for today! She’s into matching type of lessons, puzzles and building houses and cars with her magna tiles. As of this week, she wants to be a house builder when she grows up! Last week, she wants to be a doctor:) Love my Mia Boo she’s such a creative little girl!

Meal Ideas

Hello Friends! Happy Monday:) I did a little inventory of my freezers/Ref and pantry today. I really want to minimize food waste in my home, if not eliminate it entirely, and save money by being intentional with what we buy and eat. It starts with me because I’m the keeper of our house and prepare our food most of the time. My Hubs sometimes cooks on the weekends, he bakes our bread and treats! I don’t like baking! HA

We have more than enough food stored up here (Thank You, Jesus!), and will probably just need to get milk and fresh produce to supplement our meals. My list will come in handy this time. I’ve been looking around for simple and family friendly meals online (tons on Pinterest!).

Hubs baked us bread last night and it was good. He really wanted to use his new baking gadgets that he got last Christmas.

Meal Plan/Ideas this week:

We had Slow cooker Barbacoa beef tacos tonight (last night too). We don’t mind leftovers lately because it just make our lives easy come dinner time.

Weekend Fun!

Hello Friends! Hope you had a wonderful weekend. We had a nice couple of sunny days here so we spent time in our neighborhood park. Kids love it for just running around. Mia also started her soccer class. It was supposed to start last year but was delayed due to Covid, since the guidelines keep on changing. She was so excited to play soccer (she knows her Daddy use to play a lot of soccer). It was fun to see her being competitive with the other kids!HA

We also went to do our grocery at another city (35 minutes drive), we live in an area where the closest grocery store is 4 mins drive! Just for a change, see another area, get cheaper groceries! I was happy with our savings:)

Hello!

Hello Friends! Gosh, it’s been a while since I’ve been here, with the holidays and the craziness in the world plus my blog was acting up I just didn’t have the energy to post things here. Hubs fixed my blog issues and hopefully things will be better now. Anyways, Happy New year friends! I pray that you all are safe and healthy. We are doing great here, it’s been rainy, cold, gray in our side so we are cozying up at home. We play games, read books, watch shows (just finished COBRA KAI!HA).

We had a wonderful Christmas and New years with our family. Lots of food and family time. We are excited with the coming New year because Hubs and I have goals that we want to achieve! We continue to pray for Gods wisdom as we pursue them.

Happy Birthday Mia!

Hi Friends! How are you all doing?! Earlier this month we celebrated Mia’s birthday. We had a simple celebration for her because we are still in this pandemic and large gatherings are still not allowed. To be honest, we just don’t have the space to have a lot of people over and social distance, etc. The day of her birthday we had lunch at the local Italian restaurant and had pizza and meatballs *her fave! We then let her choose a toy that she liked at a local toy store. She picked a toy school bus:) To end the day we got cake pops from Starbucks.

We then had a late weekend celebration with my In laws. She wanted a Paw Patrol theme, she’s really into that lately. I made roast pork belly for dinner. It’s been a while since I made roast pork, it turned out YUMMY! We also had crabs, shrimps, and oysters!

She got lots of nice gifts from our family! The big gifts were the Paw Patrol Tower and Peppa Pig shopping mall! Thank You to our families for your generosity:) Happy Birthday to our Mia Boo! You are such a Joy to us. Thank You Jesus for gifting us Mia James!
