Weekend Fun!

Our weekend consisted of watching the movie, “The Avengers” (finally), Pizza, and a little road trip to Black Diamond where we got to see a great view of Mt. Rainier.  The weather was just glorious and sunny, so we really are enjoying it while the sun is here! I can’t wait for summer to be here..

I shopped at my usual stores again,Fred Meyer and Walgreens!  Fred Meyer is having a good deal with Beggin Strips (Riley’s fave treat) and I had a coupon for Buy 2 get 1 free and the classico sauce is 50% off right now (original price is 3.09,sale for 1.59).  I didn’t buy any meat on this trip because we went to our local meat and fish market here in Issaquah.  It’s salmon season again so we wanted to check it out! The Walgreens trip was great, the coffee creamer was a pretty good deal and I got my brother Seattle t-shirts that I will be sending to him together with other goodies!  His birthday is coming soon, anyways, it was a good couponing week for me and I’m tempted to get more coffee creamer tomorrow after my Zumba class (the gym and Walgreens are so close in my area) we’ll see….

Weekend Fun!!

I know this is kind of a late post from our weekend activities,but I’m posting anyway!  Hubby’s co-worker  invited him to go geoduck digging, and he was so excited to do this and “convinced” me to go with him. Hubby was having a grand time and this makes me happy knowing he’s enjoying his Saturday!  It was a long day though because we had to get up early and drive to Seattle and take the Ferry going to Bainbridge Island (where they did the digging). I’ve never had Geoduck before so it was also an exciting thing for me to witness, it took a while to even get one. But in the end it was worth it.  I can finally say I had geoduck “meat”, sashimi style, and it was tasty!  On another note, we hired a gardener last week to clean our yard and they “prepared” the area for our vegetable planter/box ,so last Sunday afternoon my DIL helped Hubby to finalize the box and this coming weekend will probably go to Home Depot and get soil so I can plant all the herbs and veggies that I’ve been dying to plant!

we have to take Riley with us, there’s no way he’ll be in the crate for more than 5 hours!

Beef Stir Fry

I love stir fry, especially if it’s beef!  It’s my favorite kind of meat to use, my least fav is pork because I tend to overcook it and it gets dry.  I kinda followed the Food Network recipe from their website and I added the usual stir fry veggies:-)  I will make this again,recipe to keep!

Recipe : Beef Stir Fry (adapted from Food Network)

Ingredients

  • 1 tablespoon cornstarch
  • 3 tablespoons Chinese Shaoxing rice wine, dry sherry or whitevermouth
  • 1 pound beef sirloin, thinly sliced against the grain into strips
  • Kosher salt and freshly ground pepper
  • 2 tablespoons oyster sauce
  • 2 teaspoons toasted sesame oil
  • 3 to 4 tablespoons peanut oil
  • 1 1-inch piece fresh ginger, thinly sliced
  • cloves garlic, smashed
  • 5 to 7 dried red chiles, halved
  • 1 small onion, thinly sliced
  • 8 heads baby bok choy, halved
  • Pinch of sugar
  • Cooked rice, for serving

Directions

Whisk the cornstarch with 2 tablespoons rice wine in a medium bowl; add the beef, season with salt and pepper and toss to coat. Set aside for 15 minutes.

Mix the remaining 1 tablespoon rice wine, the oyster sauce and sesame oil in a large bowl; set the bowl near the stove.

Heat a wok or large nonstick skillet over high heat until very hot, about 1 minute. Add 3 tablespoons peanut oil, then the ginger, garlic and chiles; stir-fry until fragrant, about 1 minute. Add the beef and cook, stirring or shaking the skillet occasionally, 1 to 2 minutes. Transfer the beef with a slotted spoon to the sauce mixture and toss.

If the pan is dry, add 1 tablespoon peanut oil, then add the onion and stir-fry until just soft, about 2 minutes. Add the bok choy and sugar; stir-fry until just wilted, 1 to 2 minutes. Return the beef and any juices to the pan and stir to combine. Serve over the rice.

Savings!

I only shopped twice this week.  There was nothing significant about my shopping except that I stocked up with Starbucks Kcups.  I ran out of Kcups a month ago so I’ve been using my good old coffee maker.  Starbucks Kcups can be pricey (my opinion), I chose to wait until they were on sale.

Memorial Day 2012 Part 2!

For part 2 of our Memorial weekend, My Dad In Law made some yummy ribs and we had dinner at our place. We all loved the ribs and Hubby made cornbread and potato salad:) I will have to post the recipes next week. I also watched a royal special on ABC this week.  I have this ongoing “HUGE” crush on Prince William for the last 17 years!!

Memorial Weekend

We spent our memorial weekend at Greenlake park in Seattle, we got lucky because of the nice sunny weather. We took Riley with us, and I was kinda nervous because I know there will be lots of people and I wasn’t sure if he’s going to “behave”.. He did so well, I’m a proud mamosh!  Memorial day, we had dinner here at the house and my Dad In law prepared some yummy ribs while my husband took care of the side dishes, he did German potato salad and cornbread (both were delicious). Enjoy the pics!
